Throw 'em at me. I know that, ironically, having a very open ended question can feel stifling but it really is open. Things that are a no: bungee jumping, places gov.uk advise against travel to, hunting. Looking at 2 weeks+. Leaving from UK. No kids to worry about. Budget flexible. Type of holiday flexible.

We went to Thailand end of January, two colleagues went to Vietnam in February.

If you have any interest in films, there is the IFFR in Rotterdam and the Berlin Film Festival at that time of year.

Caribbean or Canaries.
What do you like doing on holiday?

Thailand - Bangkok, Phuket, Koh Phi Phi, Koh Lanta
Mexico - Yucatan peninsula, especially Isla Holbox, Pacific coast
Nicaragua
Sri Lanka - southwest beaches, Galle, Colombo
Barbados, Turks and Caicos, Bahamas - fly and flop + snorkelling / diving
New Zealand - road trip across both islands (but especially South Island)
Brazil - Rio de Janeiro, Pantanal
Malaysia - KL, Penang Island, Langkawai, Malacca
Zanzibar
Oman - Muscat, Nizwa, Zighy Bay, Salalah

Arizona. It will be warm in Phoenix, and cool up in the higher elevations like Sedona, with the possibility of snow against red rocks in Sedona.

Florida - alligators and manatees in the Everglades.

New Zealand, although you really want 3 weeks or more for that.

Northern lights cruise up the coast of Norway. The Hurtigruten is fun.
