Could this be a self esteem issue? That you can do it when it impacts someone else (your baby) but that you somehow don't value or prioritise yourself and your own health in the same way?

Because you’re doing it for them.

Honestly, not having a wine was annoying when pregnant but it was just like my brain said ‘you can’t, so that’s that’. Not pregnant it’s a fairly substantial mental challenge not to have a Friday/Saturday night drink!

Because you're doing it for baby not for you. I'm on my second gestational diabetes pregnancy and switched diets like a light switch. Between the pregnancies when I was told I was prediabetic I didn't have the same motivation to follow the diet for my own health.

I couldn't, but then when I was pregnant for some reason even just the smell of fruit made me terribly sick.

I craved sugar and fizzy drinks even more then when I wasn't pregnant. I agree with OP it's probably psychological.

You're the second person in as many days to mention that I have low self esteem. How do I work on this?
