Menu ideas please

I have just started a summer diet and now have to travel to look after my elderly disabled DM for 5 days. I have got off to a good start 2 lb down in the first week and want to keep going.
I am looking for easy menu ideas that will work for both of us. I can go to the supermarket as I travel but then will be mostly on caring duties.
We both eat most things but DM can’t use a knife and fork. I am lactose intolerant.

Sorry forgot to say I will also have to work remotely and the kitchen has basic facilities but no more.

Are you following a specific plan? Calorie counting? Low carb? It's hard to make suggestions without knowing more about the diet.

Ok that's easier then. My go to is fish. I love a tuna steak. Either use for a salad nicois (I just dress with balsamic) or marinated in lime, chilli, garlic coriander and rice vinegar, cooking a griddle pan and serve with stir fried garlicky green beans, broccoli and rice.

Fritata and salad is nice at this time of year.

Cod marinated in yoghurt and your choice of curry paste then cooked griddle pan.

@AtleastitsnotMonday great plan. DM loves fish and the food provided for is ok quality but a limited range.
I am travelling and shopping today so other ideas also welcome.
