How would you use up six eggs?

I'm trying to avoid food waste and have just realised I have six eggs going out of date tomorrow. Any ideas on how I can use these up tonight?

I have the following in the fridge:

  • red onion
  • cherry tomatoes
  • green pepper
  • mushrooms
  • sundried tomatoes
  • courgette
  • garlic
  • grated mozzarella
  • parmesan
  • double Gloucester
  • potatoes

I was thinking little egg muffins but I don't have a muffin tin!

Eggs last for weeks past the date on the box. I never pay any attention to it. You can do the float test to check if they are still okay.

Eggs do not become unusable on their use by date. Put them one at a time in a glass jug of water. As long as they touch the bottom, even upright, they are still good to cook and eat. If they float, they are off.

6 eggs IMO = 2 cakes 😁

Eggs keep well long after their "use by" date. You've got at least a week to use them up.

They won't just turn bad the minute the clock turns midnight tonight!

Eggs last for weeks. If you're unsure do the float test.

I'd bake a cake or brownies and do homemade egg fried rice with the rest. I use up random fridge veg/ham/leftover meat, cooked rice and soy sauce or other flavourings. A few of the ingredients on your list would be perfect.

The float test will tell you if your eggs are old or not, but even floating eggs are likely safe to eat. I break eggs one at a time in a cup before adding to cake mixture or a pan to check if they're rotten (I wouldn't risk boiling an egg if I thought it was bad).

Or Frittata - You have so much you could put into that.

But I do agree with the egg test in a glass rather than the BB date.

I'm not particularly lax about use by dates but eggs are definitely good for at least a week past.

Just pop them in a bowl or jug of water.

Lays on its side = very fresh
Stands up = perfectly fine
Floats upwards = gone off

Many eggs I’ve bought have been rubbish even when well within their best before dates. When fried, they really spread out around the frying pan.

but if in doubt, the float test is the best option.
