How would you use up six eggs?

I'm trying to avoid food waste and have just realised I have six eggs going out of date tomorrow. Any ideas on how I can use these up tonight?

I have the following in the fridge:

  • red onion
  • cherry tomatoes
  • green pepper
  • mushrooms
  • sundried tomatoes
  • courgette
  • garlic
  • grated mozzarella
  • parmesan
  • double Gloucester
  • potatoes

I was thinking little egg muffins but I don't have a muffin tin!

Have you sugar, butter, flour and dark chocolate??

If not, I'd go with the omelette(s)

As others have said, no need to panic yet!
Also, it's very very easy to use 6 eggs!
A favourite of mine is a sort-of pad Thai - stir fry veg, add straight to wok noodles and cooked protein of choice, plenty of soy sauce, chilli flakes, any other seasoning you fancy. Shove the stir fry over to the side of the wok and then make a sort of omelette/scrambled egg hybrid in the space. Stir through, breaking the egg up as you go

My DH is extremely sensitive to something in eggs (probably the hydrogen sulfide) and can only eat them well within date.

So I get to eat most of them...one of my favourites is to warm some sort of tomatoey homemade soup or half a can of baked beans spiced up with smoked paprika and Tabasco and then poach an egg in it in the microwave. Shakshuka-ish.

Sometimes I make baked egg custards, very easy.

Make some pancakes, scrambled eggs for lunch and then lob any left over eggs at your annoying neighbour’s car. Job done.

Eggs keep well long after their "use by" date. You've got at least a week to use them up.

A week? I'd say at least a month.

I don't even consider doing the float test until they are at least 3 weeks past the use by date. Eggs last for ages.

Same as @OchonAgusOchonOh , I happily use eggs a month after use by date (although I do keep them in the fridge) and last time I did a float test was in school (40 years ago!)

Update:

I made a lemon drizzle cake this evening and will have a breakfast omelette tomorrow. Definitely learned something new about use by dates here!

Most eggs these days actually have a 'display until' date on them, or a best before date on them rather than a use by date.

Would be quite unusual now I think to have a use by date on eggs? Is that actually what it says on the pack?

Time they did away with all dates on food that didn't properly require it in my opinion.
