How would you use up six eggs?

I'm trying to avoid food waste and have just realised I have six eggs going out of date tomorrow. Any ideas on how I can use these up tonight?

I have the following in the fridge:

  • red onion
  • cherry tomatoes
  • green pepper
  • mushrooms
  • sundried tomatoes
  • courgette
  • garlic
  • grated mozzarella
  • parmesan
  • double Gloucester
  • potatoes

I was thinking little egg muffins but I don't have a muffin tin!

Agree with everyone else- you've got another two weeks there! Otherwise I've been experimenting with coconut flour baking which uses a ton of eggs.

I would say "lunch time!" To the dc and within 30 seconds there would be one complaining that another one ate all the eggs.

Alternatively the cake suggestion has merit

If you want to avoid food waste then I'd definitely do some reading around best before or even use by dates!! You'd be amazed at how long stuff will last beyond.

Freeze them. Break them out of their shells, break the yokes up a bit and freeze in plastic bags with a small amount of salt. (You can use sugar, but salt is more versatile).

Defrost & use as per recipe.

If you really don't want to eat after the date(although they would be fine), just whisk them up together with a bit of salt n pepper and pour into little container and freeze. Defrost when you need them and you'll have two omelettes ready to cook. Eggs whisked up ate perfectly good frozen.

I once went on an Italian cookery course and one of the things we made was a Genoese sponge. Actually we made two, the second one was turned into crumbs which were used to decorate the outside of the first cake once it had been split, filled and covered with a hazelnut buttercream on the outside . I think we used 12 eggs in total. It was huge, and delicious!

I would go with frittata.

This thread has made me realise that I have no idea about the concept of 'having to use up eggs'.

We use at least a dozen a week per person so they never get anywhere near the BBE date. And if we did do the emergency use up panic cooking, the first thing we'd need to do tomorrow is go and buy more eggs.

Your eggs will likely be fine for another couple of weeks. I find eggs tend to last ages after their use by date. Just try the water trick- if they float then Chuck them away. I would do omelette and cake though if I needed to use up 6 eggs. Or you could use the whites to make meringue and the yolk to make curd if you wanted to make something sweet although bit of a faff. Or make quiche- I loooove quiche
