Eggless, chocolate less cake...

I know you said it doesn't have to be vegan but these recipes are banging. I'm not vegan, I happily eat eggs, but this is honestly one of the best cakes I've ever eaten

@CurlewKate have a look at the other recipes on the site - I've made a few of them now and they've all been delicious. The first one I made was the banana bread and I go back to it at any opportunity tbh 😂

@CurlewKate I made a coffee & walnut one like this:

200g S/R flour
120g caster sugar
1/4 tsp baking powder
1/4 tsp bicarbonate soda
200ml milk/dairy-free milk
3 tsp strong coffee (dissolve 2-3 tsp instant in a little water)
20ml cider vinegar
80ml vegetable oil.
Handful of walnuts*/Walnuts to decorate

Mix milk with cider vinegar and put aside to stand for 5-10 minutes.
Mix all dry ingredients together.
*If putting in cake, blitz these in the blender or grinder until powder and add to dry mix. You'll need extra to decorate.
Add all wet ingredients (recommend stirring coffee mix into milk mix) to dry ingredients. Mix but don't beat.

Bake in a moderate oven (180/Gas 4) for around 40 minutes - or until a skewer inserted into the middle comes out clean

I make this in a loaf tin but it could be made in a round sponge tin.

Alternate flavours:
Lemon/Orange (add 2 tblsp juice to the milk mix - you might need a little more flour if the batter is very runny). Can also add a good dollop of marmalade or lemon curd to the mix. Or both!
Rose &Pistachio Add 1-2 tsp Rose Water (it's quite strong) to the cake batter after the milk mix. You can blitz some pistachios in a blender and stir in, or just scatter on top.
Earl Grey & Blackcurrant - 1 1/2 tsp of earl grey tea (or one teabag) mixed into the flour mix. Glaze or sandwich together with Blackcurrant jam.
Biscoff - add 1 generous tsp cinnamon to the flour, and use golden caster sugar. If you have salted caramel flavouring, add a good slosh of that. Otherwise put a generous tsp or 2 of biscoffi spread into the batter before baking. When cooked, spread with more biscoff spread and decorate with biscoff biscuits.

This is a carrot cake that tastes like ginger cake.

Half a pound of plain wholemeal or wheatmeal flour
Tablespoon of cinnamon
Teaspoon of nutmeg
Half a tablespoon of baking powder
4oz butter or margarine
4oz of honey
4oz of sugar
Half a pound of carrots

Preheat oven to Gas 3, 325 F, 170 C

Mix flour, spices and baking powder.
Melt butter, honey and sugar together and then stir into flour mixture.
Stir in grated carrots.

Pour mixture into 1lb loaf tin and bake for 60-80 minutes until firm. Leave in tin for 10 minutes then turn out.

I've had to cut and paste it from when I posted it elsewhere so apologies if it's formatted weirdly.
