Cake for pudding recipe recommendations

I am volunteering to supply a pudding for 20 people at a course. I was thinking cake would be easiest. I have 1 who doesn't eat cheese or milk (I am assuming butter as well to be safe) and 19 with no requirements.

Can you share with me your best recipe suggestions. I will be making it on Sunday and delivering for eating on Tuesday.

Can guarantee nobody will discern that this is a vegan cake (disclosure: am not vegan myself and every type I'd tried before was dry or a bit tasteless...vegan, gluten-free friend cooked me this...is honestly really delicious!)

Serves 10, so just make x2.

Can't link, but search "Wholefood Plant-based Cooking Show" on YouTube. It's the vegan chocolate cake you want. Some interesting ingredients in it!

My mum used to make one
A sponge in a ring tin and then left in the tin whilst she added a coffee syrup to soak in, with or without booze.

American cake recipes use oil instead of butter, try and find a chocolate fudge cake/tray bake or a carrot cake.
