Cooking Chicken Question

I want to make a chicken pie. It's a BBC recipe using cream cheese, leeks and chicken and topped off with a puff pastry lid/

I'm a bit worried that if I cook the filling, then leave it for a few hours before putting it in the oven, I'll kill us all..

Should I not make it until I am ready to put it straight in the oven or can I make it in advance?

If you put it in the fridge it should be fine.
Many recipes require you to marinate chicken overnight

It will be absolutely fine to cook and leave it for a few hours. I quite often cook a bolognaise or other pasta sauce at lunch time, then leave it on the stove to cool down for us to eat in the evening.

I might take a slightly more proactive approach in the absolute height of summer and slightly limit the time it's left out, but.... probalby not.

If you made it in the morning however, I'd put it in the fridge once it cools down and then take it out the fridge to use in your pie at dinner time.

It will be fine to eat that. But if you have any pie leftovers you won't be able to heat them as the chicken will have already been cooked twice.

I've never heard that you can't reheat food multiple times - but a quick google shows it's a common misunderstanding. So long as the internal temp gets to 75C when reheating, you can reheat as many times as you like (though it won't taste very nice after a while I guess...)

It's fine if you put it in the fridge in between then make sure it's piping hot all the way through when you serve it.
I've done this several times.
You can also make double the filling and freeze half for another pie later down the track, defrost thoroughly in the fridge then make the pie and cook, easy midweek meal!

We make this pie although with cream not cheese, anyway we make it from left over roast chicken and usually make the filling Sunday night put it in the fridge and I've not died yet 😀

I’ve often reheated chicken twice (stored in fridge or freezer in between) and nobody’s ever been ill.

Will just add, I often make a chicken, leek and mushroom pie with leftover roast chicken, and any leftovers are reheated in the microwave for lunch next day.
