Too many eggs - what cake should I make?

I have too many eggs that are going to expire. I'm thinking making a cake would use quite a lot of them. any ideas for cakes that need lots of eggs???😊

A pound cake? I then slice and refreeze each slice so I can grab one for packed lunches or a snack.

Simple chocolate mousse.

Melt 100g 40%-70% chocolate depending on taste. Add 4 egg yolks and mix. Fold in 4 stiffly whisked egg whites. Chill.

Don’t forget they last much longer than the dates on the box though. You can check freshness by putting them in a jug of water - as long as they don’t float they’re fine.

That's a very good point, I happily use eggs with a date stamp from several weeks ago.

Watching this avidly as I realised earlier that we have somehow accumulated 30 eggs over the last month.

The DDs had dippy eggs for tea, so now I have a mere 26 to deal with 😁
