Any ideas!?

She loves her reformer Pilates, facials etc. She isn't really a foodie nor a gardener but loves the latest gadgets etc.

She will be 64. She helps me so much I just want to treat her!

Take her to a spa and spend some time with her. She can do Pilates and have a facial. It’s not all about money!

Pilates retreat? My MIL went on a fabulous one for her 60th!

Pilates retreat sounds amazing, OP, definitely check out possible options!

If she loves gadgets, think of getting her something that would bring her joy and would also be useful. Maybe an air humidifier with led lights (like this one or similar) or a really nice digital photo frame. If she's into computer stuff or likes to take pictures, then maybe even a camera? Here is a list of good ones and you can also get her a subscription to photo editing software.

You can also make a birthday slideshow with music she likes and photos of her and family, her friends, etc. If there are other relatives or her friends who are willing to participate, you can work on a video where everyone says something nice to her and then you just join it all in one video (here is a guide on joining clips if you need one). We did it for my dad's birthday and he was in tears.

I was going to suggest a weekend away/spa etc too.
