I’d do roast chicken to serve cold, home made coleslaw, roasted red peppers, ottolenghi braised chickpeas, nice bread and cheeses.

pavlova for afters.

Fajitas. Bowls of rice, salad, salsa, guac, cheese, cooking the chicken won't take long. Have a couple of bowls of each of the fillings so people dont have to wait for each thing.

I've done kebabs in the oven one year for a very impromptu dinner with my siblings IL and their partners - teriyaki marinated beef, lemon&herb chicken, halloumi and chorizo. Can all be prepped in the daytime and don't take long to cook. Then sides of of potato salad, normal salad, my MIL makes an amazing cous cous and roast veg which is great cold. Leftovers of this meal is my DH's favourite lunch so we make sure we do loads of the kebabs.
