Pasta mixed with mayo, broccoli and chicken (diced or shredded) with some grated cheese on top... Nice and simple, very filling and tasty.

Kids love this too but prefer tuna instead of the chicken.

Pasta with fresh homemade pesto and a salad with balsamic dressing

daal and rice with frozen spinach for green -ness, and kachumber salad

singapore noodles with tofu (Meera sodha's east book)

chilli paneer and rice (also in East but she uses tofu)

easy pasta bake - look up "taming twins" and find her easy pasta bake.

nachos with all the toppings

we are veggie so sub out plant protein for meat if helps?

I cook mainly from the pinch of nom books. Really tasty recipes that are good for you too. Sometimes I double up on the ingredients so we can take a meal to work the next day as well.

Sausage and potato traybake. I add what veggies are in the fridge, usually red pepper, courgette, cherry tomatoes, an onion chopped into wedges, and some garlic.

Oven baked salmon, boiled potatoes and green beans

Beef stroganoff.

Risotto Hot smoked salmon and dill. Smoked haddock. Mushroom (made using packet dried mushrooms) with fried garlic mushrooms on top and fresh spinach stirred through breast the end of cooking.

Egg fried rice. Perfect leftover dish with ham or chicken, frozen peas/sweetcorn, pouch of ready cooked rice. Soy or chilli sauce added at the table.

This week we had: Lentil Dahl, chickpea and cauliflower curry, chicken drumsticks with garlic, smoked paprika and thyme with baked sweet potatoes and asparagus, prawn red thai curry, halloumi burgers with baked potatoes (cut like chips) and salad. My fav quick dinner is mushroom and spinach pasta (fry mushrooms, season with garlic, herbs and stock/whatever you like, add chopped spinach and soft cheese plus a little water, mix with spaghetti).

I made this Mongolian Beef dish tonight in the air fryer. It took less than 15 mins. I also fried off some broccoli spears and chucked them on top, served with sticky rice. The family devoured it.

Could do it in a pan if no air fryer?

I don't cook a recipe dish daily - probably twice a week I do v plain food. Tomorrow is lamb chops (I do mine in the oven so that all the fat is crispy but DH has his rare) with jersey royals, broccoli and leeks.

Pancake Tea.. 🤪 Tesco sell beautiful pancakes in the chiller dessert fridge. A pack of the American style and a pack of Dutch style, bottle of syrup.. microwave them and slather syrup on.
Every Day is Pancake Day when I can't be fucked to cook .. 🥞

We had a roast chicken yesterday with loads of veg cooked in a roasting bag so no last minute prep, little washing up, and low fat!

On this occasion, potatoes, carrots, green beans, onion and celery. Put a little chicken stock in with them and they steam. Chicken was one in a bag to cook in. So no roasting pan, no saucepans. I'm making soup today with the (small amount of) leftover veg and the juices of the chicken.

Tonight we're having burgers with everything and lots of salad. DH will probably have chips - I don't think I'll bother. Tomorrow will be chicken fricasee and rice. There will probably be enough scraps left over for chicken fried rice or chicken cottage pie on Tuesday. (There are only 2 of us).

Chicken casserole in the slow cooker

in the morning chuck in chicken breasts, onion, new potatoes, carrots, leeks or any mix of veg you like then I add a sachet of chicken casserole flavouring

on low all day and then I shred the chicken before serving.
