And it still be ok to eat afterwards. Want to make a cake in advance for my dd birthday as don’t have so much time in my hands but wondering how far in advance I can make it! Won’t have access to a freezer only a fridge annoyingly as staying away for it.

I wouldn’t put a cake in the fridge at all.

Cakes should always be kept at room temperature - Unless it has something on it that might go off, such as cream or fresh fruit. Then it could go in the fridge, but it’ll spoil the cake if you do.

You can help keep a cake from drying out in the fridge (if indeed you have to refrigerate- I'd agree that I'd avoid if possible) by using a simple syrup on each sponge layer as you stack.

Psck cake and icing separately - ice as close to event as possible and short refrigeration only. You will prob have to have icing out of fridge for a bit before doing

What sort of temperatures? And what sort of icing??

Our kitchen used to be (cooled to) 27C. I didn't put cake in the fridge - but also didn't need to keep it longer.

Can you take uniced cake, wrapped. And icing for the fridge (assuming butter icing) and just combine at the last minuite? Or will you not have time for that either?
