Help me with nutritious veggie lunch ideas

I’m a veggie and a crap cook. We eat fairly nutritious dinners but my day time food intake is crap and I’ve lost weight due to sheer laziness. I know I’m not getting enough nutrients.

Can you please give me vegetarian snack and lunch ideas that aren’t too complex? I WFH do that makes life easier. Thank you!

I use this formula:

Grain + cooked veggie + raw veggie + protein + nuts/seeds + salad dressing.

Eg. Quinoa + cooked asparagus + crunchy lettuce + hard boiled egg + toasted sunflower seeds + vinaigrette dressing

Or eg. Rice + steamed broccoli + grated carrot + crispy tofu + toasted mixed seeds + Asian dressing

Halimi, roast veg, hummus and sweet chilli salad.

Veggie pakora/samosa with yogurt dip and rice/salad

Pesto pasta

Veggie fried rice, make a batch and take a portion each day. Add soy sauce/sweet chilli before eating.

Ditto with couscous. Add lots of raisins, pomegranate seeds, tomato, fresh herb and veggie stock when you cook it. Box up a portion and add a splat of raita (yoghurt, citrus juice, cucumber, olive oil and pepper.

For a really quick lunch I put pre made falafel in the oven/ microwave, pita bread in the toaster then combine with hummus and salad leave. Sometimes with extra raw vegetables cut up on the side. I keep falafel and pita in the freezer

I make a big portion of chickpea “tuna” (loads of recipes online) to keep in the fridge, and have toasties with avocado, tomato and some pesto.

Snackwise, I like making a butter bean dip and having it with some carrots roasted in the air fryer.

I got a book The Green Lunch Box a year ago and it’s good for ideas. Lots of plant proteins in each lunch. Some are a bit complicated but some are really easy and delicious and I make a lot

Mix a drained can of green lentils with a bit of lemon juice, have about a third of that on a bowl of salad leaves, chuck on tomatoes, olives etc and then egg or cheese or whtever, maybe a sprinkling of seeds or nuts ... Massive Salad in moments.

Soups... doesn't take long to sauté an onion or two, some of other veg you've got (red pepper, carrots, celery, leeks, garlic) till softened, add a can of some sort of beans (Asda do a 5 bean mix which is good), a can or two of chopped toms, veg stock cube. Red lentils if you sent and have a bit more time (ca 20 mins simmer). Makes quite a few portions to fridge and freeze so very quick on other days.

You can make a pea dip similar to humus which is lovely and red lentil humus or regular humus ( loads of recipes for online) all much nicer than bought and you know what is in it

I've been looking at too much Instagram and I want a salad bar - just a shelf in the fridge with prepped tubs of salad veggies to help yourself from every day.

Anyhoo. I tend to make a big pan of soup on a weekend day - one with beans or something in for protein, and freeze that in portions. I have a tin or two of supermarket soup in my desk draw for emergencies too, and a bag of nuts to snack on.
