Low GI lunch

I have a friend coming to visit and she's on a low GI diet.

I almost never have guests and when I do it's pizza and quiche. Can you please suggest some nice low GI lunch and snacks? I can't think of anything beyond some cold leftover chicken I have and pasta with veg and and cheese.

I’d do some sort of warm lentil/chickpea salad with roast veg and halloumi on top. Or use your chicken in place of the halloumi. Lots of herbs and a lemony dressing.

Oh yes soups would also be good - avoiding potato based ones if she’s being really strict.

Or a frittata or crustless quiche?

Not pasta. Cold chicken (or other cold meat) is great. Lots of veg/salad. Coleslaw or other veg based salad.

If you want to do hot, a roast chicken with lots of different roasted veg is fabulous. Avoid potatoes, but Mediterranean veg is excellent. I just cut up loads of peppers, onions, courgettes, whatever I fancy, put them in a big dish and cook the chicken in with them. Cheese and fruit afterwards maybe?
