How do you make fish pie?

I mean, I know how I make it, but I wondered what variations there were amongst MNetters.

I use a piece of salmon, a piece of hake, four scallops and four giant prawns. Then I add some frozen peas and some fried mushrooms, and put the cheese sauce on top. I make my own cheese sauce, with mustard and various cheeses.

Finally, I put lots of mashed potatoes on the top, sprinkle with grated cheese and cook for about half an hour. If there are any tomatoes in the house, I slice some on the top, too.

Similar here. No prawns though. Chopped hard boiled egg instead.

Salmon, smoked haddock, prawns and cod. Grated carrot in with the fish. Basic white sauce then mustard mash on top.

White fish and prawns (DDs not a fan of salmon.) Parsley sauce and peas in the dish, mashed potato on top then sprinkled with cheese and baked in the oven.

prawns, haddock, salmon, something smoked, a few cornichons. I make the sauce with cream, mustard, lemon juice and white wine. mash with grated cheese in it and on top.

I poach fish in milk, cod, salmon, hake, scallops, whatever I fancy at the time. If I add prawns they go in last uncooked. Then use the milk as the white sauce via the roux method. I also add cheese to my sauce, salt and pepper. Top with mashed potato and bake in oven.

I don’t make cheese sauce, doesn’t the cheese overpower the fish?

I use a mix of fish, whatever I grab buy usually including a smoked fish of some kind with some white fish and some prawns.

I simmer the fish in milk to cook it through (except the prawns as tend to use frozen), then strain the fish and use the milk to make a white sauce.

Put the fish in the dish, add defrosted prawns, halved boiled eggs and sweetcorn, cover with the sauce.

Mash the potatoes using any left over milk/white sauce, top with grated cheese and into the oven for around 30mins ish.

Salmon, cod, prawns. Cheese sauce, mashed potatoes. I serve it with veg (peas, broccoli etc) rather than putting any veg in the pie.

I don't find that it does, although I'm interested to see how many people simmer the fish in milk first, then use that milk to make a white sauce.

Not keen on smoked fish or boiled eggs in it, either.

My top tip is to poach the fish in cream, not milk. (Thank you Rick Stein).

Best fish pie ever. DH doesn't do prawns or mushrooms, so your one wouldn't work for us OP but sounds lovely (bit of a waste of scallops imo but delicious)

I make a basic bechamel with lots of nutmeg. Sometimes a tsp of dijon mustard.

Add half to baking dish.

Then chunks of seasoned white fish, salmon, smoked haddock and some king prawns - all raw. Add frozen peas or spinach.

Top with remaining bechamel.

Top with mash, some breadcrumbs and grated cheese.

I do this..... but use sweet potato and squash for the mash. And breadcrumbs on top for crunch.

Smoked haddock, small prawns plus white fish, definitely no evil peas! And no cheese, cheese and fish is so wrong.

So fish (mixed, whatever looks good usually mussels and prawns, a white white sauce with lots of parsley and chopped shallots, garlic, finely chopped chilli, oregano, fish stock cube, the sliced potatoes to top (I parboil the potatoes first to speed up cooking). Not traditional.

I do mine with monk fish, raw prawns, cod loin and some Vietnamese cobbler. The sauce is made just from crème fraiche and dill.
Topped with cheddar mash.
It's always a winner though very expensive with the monkfish but it satisfies my largely non fishy family.

Lazy fish pie here - I use Isigny creme fraiche for the sauce. Quick and delicious.

Nigel slater suggests that some smoked haddock is always good in fish pie and I think I agree with him. Not keen on the sauce being too cheesy...prefer a bit of cheese on top to go crispy.

I don't use cheese in the sauce, might sprinkle some on the top occasionally. And I've never put mushrooms in a fish pie, just peas, occasionally small pieces of broccoli

no cheese, no mushrooms.

always some smoked haddock, white fish, salmon - all poached in the milk
Eggs.
some lemon and parsley in the white sauce (made from the poaching milk)
Prawns would be a nice addition if I had any.
