How do you make fish pie?

TheShellBeach · 26/03/2024 15:48

I mean, I know how I make it, but I wondered what variations there were amongst MNetters.

I use a piece of salmon, a piece of hake, four scallops and four giant prawns. Then I add some frozen peas and some fried mushrooms, and put the cheese sauce on top. I make my own cheese sauce, with mustard and various cheeses.

Finally, I put lots of mashed potatoes on the top, sprinkle with grated cheese and cook for about half an hour. If there are any tomatoes in the house, I slice some on the top, too.

finely sliced leeks fried in butter, smoked haddock, cod, prawns, salmon, scallops, poached in milk and cream with a pinch of saffron then make a roux with the poaching liquid, add a few capers. I top with crushed new potatoes in their skins topped with butter (the skins give a great crunchy topping).

Serve with greens or green beans.

Definitely no peas in it, or mushrooms - I have never heard of mushrooms in a fish pie, I think both peas and mushrooms would be overpowering.

I always use Rick Steins recipe, lots of different fish, lovely cream sauce but I miss out the parsley (don't like it) and add dill.

Waitingfordoggo · 26/03/2024 16:20

I use salmon, white fish and smoked haddock. White sauce with chives and a bit of Dijon mustard in it. Mash with a bit of cheese on top. I like a boiled egg in it but keep forgetting to put one in whenever I make it 🙄

Yeah I’ve my heard of mushrooms in a fish pie either.

Mines quick and lazy. I poach cod, smoked haddock and salmon in milk then use the milk later to mash the potatoes. Stir in crème fraiche as the sauce and top with the mash and grated cheese on top. Very simple but tasty although I do find too much crème fraiche a bit sickly but I’m not a lover of cream so 🤷🏼‍♀️

Best fish pie ever. DH doesn't do prawns or mushrooms, so your one wouldn't work for us OP but sounds lovely (bit of a waste of scallops imo but delicious)

This is what I do too. Always random fish though, whatever is on offer.

Lovemusic82 · 26/03/2024 16:23

No cheese sauce and no mushrooms 😬, I love mushrooms but never with fish.

I cook the fish in milk and then use the milk to make a sauce with wine and parsley. I use what ever fish I can get, salmon, cod, haddock, hake but no prawns as dd won’t eat them. I do put a bit of cheese on the top but not in the sauce, also add peas. I don’t mind some slices of tomato on the top either.

Lazy fish pie here - I use Isigny creme fraiche for the sauce. Quick and delicious.

And I don’t poach the fish - I use one of the supermarket fresh fish pie mixes. Stir it into the leeks, grated carrots and chopped celery that I’ve already softened in oil, lemon or lime juice, bay leaf and rosemary. Add the creme fraiche, stir it up. Then a layer of grated cheese, top with mash and some more grated cheese. Into a hot oven for 10 mins then turn it down to medium for another 15 mins and done. Fish cooks in that time. Think it was a J Oliver recipe originally but with a few adjustments.

TheTripThatWasnt · 26/03/2024 16:26

I do a 'quick' fish pie which I saw Jamie Oliver make on TV years ago...

Fish pie mix from the supermarket (mix of salmon, white fish and smoked fish), mixed into a pie dish with grated carrot, grated cheese, a big dollop of creme fraiche, some frozen peas and (if I have it) some finely sliced spinach. Top with mash and bung in the oven.

Looks very dry and stodgy before it's cooked, but the carrots, peas and spinach all slacken off the sauce and it's lovely when it's done. No need to cook the fish beforehand - it just cooks in the sauce.

If I want to make a bit more effort then I do all the other stuff (poach the fish, make a sauce etc), but for a quick easy dinner, the quick way works really well.

I still use Annabel Karmel’s recipe from her baby weaning book. DS is now 22 and it’s still our favourite fish pie recipe!

This. This is not only THE BEST fish pie recipe but it's also my death row dinner! It's foolproof and absolutely delicious. I follow it to the letter.

LoobyDop · 26/03/2024 16:53

I always use Jamie Oliver’s recipe too. In fact, I did it last night and we finished it for lunch today. So easy I don’t need to check the recipe any more. I’m not a massive fan of smoked fish in it, and definitely not prawns, so I just use cod.

Chunkycookie · 26/03/2024 16:54

Bag of mixed frozen fish from aldi, a jar of cheese sauce, frozen peas, topped with carrot and potato mash.

Manyandyoucanwalkover · 26/03/2024 16:56

Cod, prawns, salmon parsley sauce, topped with mash and grated cheese.

ThePriceIsWright · 26/03/2024 17:04

Cod, smoked haddock and king prawns
Make a white sauce with finely chopped leeks or sometimes I use peas / sweetcorn
For the topping I slice potatoes and par boil them then cook all together

BellaBaxter · 26/03/2024 17:06

I use a Jamie Oliver recipe that uses salmon, cod and haddock, grated carrot, grated celery, grated cheese and lemon juice then mashed potato on top. Have also in the past added tomatoes, spinach and hard boiled egg. I absolutely love the fact that there's no creamy sauce.
Rarely make it though because in a household of 5, only two of us like it.

ThePoshUns · 26/03/2024 17:08

I buy the frozen fish pie mix and frozen king prawns.
Poach the fish in milk then use the milk to make a cheese sauce. Add frozen peas. Top with mashed potatoes and grated cheese, whack in the oven. Delicious.

BellaBaxter · 26/03/2024 17:10

Seems like Jamie Oliver has a fair few different fish pie recipes 😂

Allthegoodusernamesareused · 26/03/2024 17:14

Poach fish (smoked haddock, cod, maybe salmon) in milk with halved onion and cloves. Use poaching milk to make white sauce, and mix in the fish, peas, parsley and season. Put in baking dish, top with mashed potato and grated cheese.
No prawns as I'm allergic, no hard boiled eggs because 🤢

Justyouwaitandseeagain · 26/03/2024 17:14

I poach white fish in milk, a little butter and fish juices with dill, add softened leek. Use milk to make a white sauce with flour and mustard powder. Then cover with mash and top with grated cheese before finishing under the grill.

londonmummy1966 · 26/03/2024 17:25

f I'm making it properly then I poach cod loin and smoked haddock in milk, fry leeks in butter then add flour to the pan to create a roux and add the poaching milk to make the sauce. Add fish to the sauce then top with mash (often add spring onion greens or chives to it) sprinkle with grated cheese and breadcrubs and cook for 30 minutes.

I sometimes make a quick version of fried red onion and mushrooms and smoked haddock topped with finely chopped cauliflower cheese - usually when M&S have yellow stickered fish and cauliflower cheese.

TTPD · 26/03/2024 17:26

I follow a Jamie Oliver recipe.

Spring onion and chopped carrots in the dish and softened, and flour and milk to make the sauce. Add diced fish, peas, and spinach, and a little mustard. Sprinkle feta cheese on top. Top with 50/50 mix of potato and sweet potato mash. Bake.

fluffycloudalert · 26/03/2024 18:07

We usually have a variety of odd random bits of fish in the freezer I have been known to chop up fish fingers and it can be an assortment of salmon, cod, haddock, smoked haddock, pollock or some other white fish, prawns, and if it is looking a bit thin on the ground, I might put in a tin of salmon as well. Either cheese sauce or parsley sauce, sometimes I put parsley or wholegrain mustard in the mash topping. Can be left as is, or topped with cheese or a sprinkling of crushed tortilla chips.

canttellyouwhereorwhatido · 26/03/2024 19:21

Any old assorted fish remnants from the freezer .. poached in milk. Fishy milk saved to make the white sauce.. frozen peas and six hard boiled eggs (put them into the potatoes while they boil.. it up eggs .. mix into fish and peas pour in sauce give a good stir and top with mash ..

The secret is lots of seasoning .. yum yum .. mums fish pie is a regular request.. it also only takes about 20 mins to prepare and 30 mins in the oven .

SuePotato · 26/03/2024 19:27

I’m not a huge fan so my recipe is very easy/basic- but the dc like it.

I tend to just do smoked haddock (frozen) poached in milk and no other fish.

make a cheese sauce using the poaching milk, put fish in the bottom, top with cheese sauce and then mash. A little more cheese on top before popping in the oven.

i don’t put veg in it as the kids will pick it out, but they will eat it separately on the side (broccoli, peas, sweetcorn etc)
