How do you make fish pie?

I mean, I know how I make it, but I wondered what variations there were amongst MNetters.

I use a piece of salmon, a piece of hake, four scallops and four giant prawns. Then I add some frozen peas and some fried mushrooms, and put the cheese sauce on top. I make my own cheese sauce, with mustard and various cheeses.

Finally, I put lots of mashed potatoes on the top, sprinkle with grated cheese and cook for about half an hour. If there are any tomatoes in the house, I slice some on the top, too.

No salmon, I’m not keen. Smoked haddock, any good white fish, prawns. All poached for a few minutes in milk, milk used to make white sauce.

A little cheese and a splash of white wine added to the sauce, plus a fish stock cube, some fresh parsley if I have any. Add S&P if needed.

Add cooked fish (in bite sized pieces) to sauce, transfer to ovenproof dish. Cover with plenty of mashed potato (mashed with milk and butter), grated cheese on top, whack in the oven to heat through and brown the top.

I don’t add hard boiled eggs or capers, IMO a good fish pie doesn’t need either.

Never cheese with a fish pie here.

White fish, prawns, smoked salmon, chopped eggs, peas and parsley sauce, topped with mash. Simple but lovely!

Pretty much the same as @Badburyrings but no cheese in the sauce.

Make the sauce first in a biggish pan then add the raw fish cut into bite sized chunks. Simmer until the fish is cooked, it only takes a few minutes. Cook veggies while the fish simmers and chuck in when they are done. Mary Berry adds boiled eggs, I can take them or leave them so don't usually bother. Mash on top pop in the oven until it's brown

I'm a competent cook but my fish pie never tastes as good as a Charlie Bigham ready made one. And with the cost of prawns/fish it's not bad value!

Mine is fairly a standard bbc good food one. But in true bbc good food style I've adapted it to my family's simple tastes.

Make a white sauce with leeks (sneak in a bit of dijon mustard to go wild with the taste 😃). Mix in salmon and haddock (no smoked fish - thank you very much) and chives. Topped with mash potatoes.

I actually really like it but of I was cooking just for me I'd add in prawns, maybe some scallops if I could get hold of them.

Even though I'm not sure about the capers I'm now considering moving in with @Revelatio. Just a heads up - I'll give you a bit of notice 😀

My lazy one -

Frozen fish in sauce - cut out of bag while frozen and put in slow cooker, add peas, frozen mash. Put on slow for about 6 hours give or take.

MrsDilligaf · 26/03/2024 20:15

Sautee leeks, Shallots or onions
Poach Cod, Smoked Haddock, Salmon and Prawns in Milk
Use milk to make sauce - either bechamel or an onion sauce packet mix.
Fling in a few handfuls of peas
Top with Fat Mash ( mash with butter, salt, cream)
Sprinkle Panko breadcrumbs mixed with parmesan on top
Bake for 30 mins

Booootiful!

Cod salmon hake with peas and green beans in a white sauce with parsley topped with cheesey mustard mash

ohthejoys21 · 26/03/2024 20:54

J Sheeky do a lovely one, it's a hit every time.

Revelatio · 27/03/2024 21:47

@AnImaginaryCat you’d be very welcome!

I also do Jamie Oliver's Fantastic Fish Pie. It's the best one and the easiest. You can leave all the spinach and eggs and stuff out of it if you want a really simple one or add lots of different fish, prawns, etc too. It's really easy and children and grown ups love it.

ToMowOrNotToMow · 27/03/2024 22:02

Lobster bisque and cream sauce. Take sauce off the heat. Add smoked haddock, raw salmon and cod chunks, raw prawns and finely chopped chives to the sauce. Place fish and sauce mix in an oven proof dish and top with mountains of fluffy mash made with potato ricer. Oven bake to brown top and cook fish through.

Linlithgow · 27/03/2024 22:24

Similar but I do a Jamie Oliver version.. mixed fish, grated carrots, celery.cheese, lemon zest and a chilled, then squeeze the lemon and mash on top... it's delicious

Floralnomad · 27/03/2024 22:31

I poach the fish in the milk and then use the milk for the cheese sauce . I use salmon , white fish and smoked haddock , no prawns as husband doesn’t like them . Sliced hard boiled egg and a layer of cheese between the fish / sauce mix and mashed potato . Cheese on top . Served with veg .

I make this, everyone loves it. Add prawns to the fish mix to increase the ratio of filling to potatoes and don't spare the mustard for flavour. Delicious 😋

A generous lb of cod or haddock
A generous half lb of smoked haddock
100gm of prawns
50gm cockles
Parsley
Half lemon juice or half glass of dry white
Dsp of capers

Poach the fish in about two thirds of a pint of milk, very lightly having added a bay leaf and 6 black peppercorns.

Strain the fish
Use the milk to make a white saucd with a roux, add the lemon juice or wine and parsley, salt and pepper. Fold in the fish and transfer to an iven proof dish. Refrigerate.

When cold top with fluffy mash.

Pop in the oven for about 40 minutes.
