Easy lunch recipes please

I’m recovering from surgery and a good friend is going to visit next week. She’d be quite happy with a takeaway, but I’d like to get back in the kitchen and make something easy but tasty. DH has been doing all the cooking while I recovered but he’s now back at work and my mind is drawing a blank. Thanks

What did you eat before surgery?
Toasted sandwiches- ham/cheese/tomato, club sandwich, chicken/advocado
Wraps- falafel/homous and salad
Soup with crusty bread

Thanks? Would usually be at work eating something quickly on the run. Weekends were much the same.

Some other thoughts. Depending how well you are, could you cook the day before? Pasta bake, lasagne or make a bolognese sauce. Then heat on the day/cook the pasta and serve with a salad.

  • Make a selection of sandwiches and serve in centre of the table to choose what you each like
  • Buy scones/jams/cream and make it a mini-afternoon tea
  • Jacket potatoes with a choice of toppings. Tuna/sweetcorn, chilli, coronation chicken, coleslaw, cheese

When my sisters come to lunch, which has to be quick as I'm working and only get half an hour, officially, we usually have cold chicken, jacket potatoes and salad. Sometimes it will be a quiche, bought cold meat, salad and crusty bread. Or pate etc.

I don't do anything not (except the jacket potatoes) or anything which needs last minute prep. I also don't do soup as our tastes in soup are completely different!
