what are your best one pot chicken dishes?

I'm not a good cook. I also make homemade food for most meals, I eat out or get a sandwich less than once a week. I'm also bored with what I eat. DH is vegetarian and most of what I eat is vegetarian, I can go weeks without having a meat, but I do eat turkey and chicken - I'm just not good at cooking it. I saw a recipe on instagram and it was really basic, I didn't have to measure anything, and I'm eating it now, it's the most delicious thing I've ever made, so I'm wondering what else I might try.

Here's the instagram dish - a whole feta in the middle of a baking dish, a cut up chicken breast, cherry tomatoes or cut up tomatoes, garlic gloves, olive oil drizzled over the top and seasoning - I added smoked paprika, chili flakes and dried/powdered onion. Oven on 200 for 30 min. The lady who posted was low carbing so she roasted cauliflower, I'm not so I made pasta. When the dish is ready you just stir it all up together in the pan and transfer it to the pasta bowl. It's so delicious. I will add more veg in future, but this feels like a decadent treat and it made me wonder what else might be as easy?

I love the chicken shawarma if you like spicy food or the chicken and chorizo risotto but she also does lots of easy cook recipes and tray bakes. Also you can adjust the recipes for number of people.

Great recipe videos on Pinterest or Tick Tok, chicken & mushroom with red onion in a cream + mustard sauce is lovely, add rice at the end. Slow cookers are the bomb for stuff like this, even a small one second hand.

Don't even need to use a pot!

Whole chicken (or pieces if you prefer)
Potatoes cut into wedges.
Carrots cut into big pieces
An onion or several onions
Whatever other veg you fancy - corn cobettes, green beans etc.
Whatever seasoning you like - I usually use a Maggi garlic and herb seasoning but you could just use garlic, paprika, salt, herbs, chilli powder - anything you like.

Put all of it into a roasting bag - cook for however long you need to for the chicken. Longer for a while chicken, less for small bits. If cooking for less time cut the potatoes and carrots smaller to make sure they cook.

Cut the bag open when it's ready and plonk into a dish!
