Wheat allergy - anyone have this/know much about this?

I cut out eating gluten around 6 months ago after linking it with my stomach issues, cutting it out has completely resolved all my stomach issues. However, I seem to have gotten more sensitive since cutting gluten out, and on the few occasions when I have accidentally eaten something with wheat in I get diarrhoea, sweating, dizziness and intense stomach cramps pretty instantly.

I recently had a hair dye allergy test which went bright red with dry, flakey skin after around 24 hours. I've never reacted to hair dye, but after looking at the ingredients it contains 'wheat amino acids'.

I'm now wondering if perhaps I don't have gluten intolerance but that it's maybe a wheat allergy, as I've read that gluten itself can't be absorbed through the skin.

Does anyone have a wheat allergy and know much about it? Is it something I should go to the GP about? I'm tempted to try eating something with gluten that isn't wheat (like barley and rye), but the symptoms I get from when I've accidentally eaten wheat have me terrified to attempt that
