Last minute vegetarian dinner party ideas

As the title says, tomorrow I'm hosting a very last minute dinner party, just for six people but two of them are vegetarians.

I cook quite a lot of vegetarian meals, but none of them are particular fancy/interesting & some of them take quite a while.

I won't be home until about half 5 & guests will be arriving between 6:30 & 7

I was thinking of having some nice bread with olive oil, some olives & some hummus with bread sticks on the table for when they arrive.

Then maybe a soup as a starter? Or a Feta salad, neither are overly fancy but I think they will be okay.

Pudding wise I've got a collection of quick bakes I can do, so that's fine.

But it's the main course I'm a bit stumped on. If anyone has any ideas/links to recipes, I'd really appreciate it. Thanks

I detest the tastes like meat looks like meat items. I don't like the texture of meat.
But you can get veggie burgers which are pure veg in most supermarkets frozen sections really cheap.

Cheap isn’t a word I want levelled at dinner party food, really.

The risotto that wasn't mushroom that someone posted sounded interesting, though.

A seasonal option might also be butternut squash risotto topped with toasted fresh sage leaves, I've made this in the past and it was really easy and tasted good.

What about a vegetarian chilli? You can pre-make it the night before or put it in slow cooker in the morning. Then make it more dinner party worthy with lots of additions - guac, sour cream, cheese, tortillas etc

Thanks for all ideas & recipes, I've decided to play it safe with a veggie lasagne but hopefully it won't be too boring. Doing a chicken & chorizo bake for the non veggies & serving with garlic flatbreads & salad.

I feel it's too last minute to do much more & it's totally my fault it's so last minute, so that's on me.

a crispy greek filo pie, see BBc website or a puff pastry base, score a line around 2 cm from the edge,egg wash cook until lightly brown and puffed up the when it comes out spread with rose harissa, roast some butternut squash, red onions, aubergine and peppers with ras el hanout spice and when cooked put on top of the harrissa, sprinkle wioh feta or goats cheese and if being fancy pile rocket on the top ! tasty and quick can make indiviudal or as one big rectangle!
