Is this turkey mince okay?

Cooking with turkey thigh mince for first time. Didn’t realise it’s a day past use by date. Top side is a different colour to bottom side on getting out of package as pictured. No odour. Is this normal or should I not use it?

Sometimes meat can go like that when the top is exposed to air.

As a general rule though I wouldn't eat poultry out of date.

I'm.a chef. I wouldn't use that. If air has got into the packaging then the use by label is irrelevant. That is not fit to eat.
