Ideas for low carb Mediterranean salads

Hi all

Im looking for ideas for lowish carb easy to assemble salads that fit into a lower carb/mediterranean style diet. I’m trying to lose weight sustainably. Any mumsnetter ideas gratefully received .

I had a good one made with berries of choice, salad leaves, walnuts, Membrillo (sugary) and goats cheese.

I also like a tomato, mozzarella and pesto salad: simple but always delicious.

Rocket, roasted butternut squash, Parma ham, parmesan, toasted pine nuts and balsamic is also good but I don't know if it counts enough as "low carb" as I don't really count that sort of thing.

I also like a salad made with roasted butternut squash, tomatoes, red onions and peppers, as well as parsley, rocket and feta (with a lemon dressing) but I usually add croutons to give some kind of crunch so they might have to be subbed out.

I'm trying to think what I've got in the fridge / cupboard, because I need something like this later to get some 'goodness' as my granny would have called it Grin

Tuna / sardines / salmon
Olives (black and/or green)
Chopped tomatoes
Cooked green beans
Dressing of lemon juice, salt and pepper

Mixed salad leaves, grated carrot, cucumber with the following.

Salmon and tzatziki

Tuna/tuna mayo, and a little red onion, olive oil

Chicken, bacon, tomato salsa, red cabbage slaw.

Spicy chicken (I use pakora) roast veg, sprinkle of parmesan cheese, mayo and chilli sauce.

Goats cheese and tomato salsa/or middle east aubergine tomato dip.

Houmous and feta

Grilled halloumi with roast peppers (or fry with halloumi) tomato salsa, plain yoghurt and a touch of chilli sauce.

Coronation chicken. Make the low carb coronation sauce by frying onion, add a TSP of mild chilli powder and cumin and cook with the onion for a minute. Remove from the heat. Add yoghurt. Once cooled to room temp add mayo and add to shredded cooked chicken.
