Mixed salad leaves, grated carrot, cucumber with the following.
Salmon and tzatziki
Tuna/tuna mayo, and a little red onion, olive oil
Chicken, bacon, tomato salsa, red cabbage slaw.
Spicy chicken (I use pakora) roast veg, sprinkle of parmesan cheese, mayo and chilli sauce.
Goats cheese and tomato salsa/or middle east aubergine tomato dip.
Houmous and feta
Grilled halloumi with roast peppers (or fry with halloumi) tomato salsa, plain yoghurt and a touch of chilli sauce.
Coronation chicken. Make the low carb coronation sauce by frying onion, add a TSP of mild chilli powder and cumin and cook with the onion for a minute. Remove from the heat. Add yoghurt. Once cooled to room temp add mayo and add to shredded cooked chicken.
