Can anyone explain this confusing weight loss to me? (16:8 and keto)

I started doing incorporating 16:8 into my keto diet last week.
This is the food I had and the weight loss.

Wednesday:
Morning: Green Tea (fasted until 1pm)
Lunch 1pm : Prawn Miso Soup (4g carbs), Low carb bread peanut sandwich (1 slice)
Dinner 6pm: Red Thai curry with spiced sea bass (keto friendly recipe)
Snack: Double cream with berries and tea (stopped eating at 9pm)

Weight loss: 0.05kg (this is how much I have been losing for a week)

Yesterday was snow day so decided to have breakfast and was a-bit lazy and didn't fast.
Breakfast: half a crumpet, 2 low carb toast and a omelette
Lunch: Low carb roll with cheese slice, semi skimmed latte
Dinner: Fajitas with salad and full fat mayo (no wraps or tortillas, just a salad with chicken and red peppers)
Snack: Two mini cinnamon rolls (like 4cm diameter), berries and double cream

Weight loss: 0.5kg!!!

I don’t get it

Can't explain the weight loss but you'll be out of Ketosis now and will have to work hard to get back into it.

I find carb cycling works best for me. So 3/4 days low carb (tend to paleo rather than keto) and then I’ll have pasta or something 1 day. I also have to make sure I eat enough. If I don’t then weight loss stops. Might be something like that?

I think you need to stop weighing yourself daily, do it once a week to get an overall reading. The first day could have been the fact you still had liquid/food in your system from the previous day, or perhaps had had an extra drink (I've checked and having a glass of water can add .2kg to my reading! - but I'm not doing to stop drinking water).

I had a weight loss of 0.05kg for a week and a half/
Its only when I have breakfast that I seem to lose more

You can fluctuate hugely between days and any weight change isn't just linked to exactly what you ate the day before / day of.

Also I have been doing 10000 steps and tabata work out daily.
I did 8000 steps and no tabata workout yesterday.?!!

There’s a lag time with weight loss… you don’t lose or gain fat based on one day worth of eating.
Any eating protocal will give you ups and downs, it’s the consistency over time that brings the long term loss.

To be clear, it’s not the skipping meals that causes weight loss, it is the condensed eating window which simply means you can’t cram enough calories into the smaller window that you could spread over many more hours (if you’re eating clean / keto etc). Fasting has loads of benefits outside of fat loss but the fundamental reason it works for reducing fat is you are taking in less calories. Keto is just extra helpful bc protein and fats are mote satiating than carbs, which means you will eat less for your cals but still be as full.

Ah okay.
I am eating healthy etc.
I assumed 16:8 would accelerate my weight loss even more and I am missing my morning tea for no reason.
I will probably do a mixture of both.

There was some research showing skipping breakfast actually increased weight gain as you metabolise food better in the morning and will make up some of the calories later in the day when they are more likely to be stored as fat. If you are intermittent fasting it is much better to have an earlier evening meal. Ideally you want to get 40% of calories at breakfast, 40% at lunch and then the rest early evening. I would make sure your breakfast calories have at least 30g protein.
