Help! Quick cooking question!

Hi - I’ve already started to make a US derived recipe from a lady who gives dump bag recipes. This one is for 8 servings but I’m cooking it now on oven not as freezer dump bag.
recipe states 14.5oz tomato paste. 14.5oz is about 400g
I assumed (apparently wrongly) that paste is same as purée, so I just bought 2 x 200g tubes of purée.

However putting 2 full tubes of Tom purée into a beef chilli seems a bit crazy, albeit for 8 people.

Anyone think 2 tubes will be ok.
Or have I worked something out wrong. 😬

What the heck is a dump bag recipe?

Verbena17 · 02/02/2024 17:22

A freezer dump bag - where you prep meals by putting all the raw ingredients into big zip loc bags, then just defrost overnight and slow cook the next day.

So this lady tells you all the ingredients for tons of meals so you can just buy the stuff you need then make loads of freezer meals. Only I have zero freezer space, so making a sweet beef chili for tea and then probs sending the rest to my mum’s freezer 😂

Bit much, I think.

It is puree but with added water. Google says so so it must be true

Verbena17 · 02/02/2024 17:26

Thanks - so shall I just put one tube mixed with water?

I would say you need passata, do you have tinned tomatoes try one of those and a good dollop of purée. Or about half a tube of purée and water to make up the liquid. Remember you can always add more purée or water if needed

Thanks for the explanation! Dump bag though, not a great word to use regarding food 😆

Verbena17 · 02/02/2024 17:29

Hmm it doesn’t say passata so who knows
It says 2nd tins of toms and I have those so think I’ll do the half tube idea and add some water/beef stock to it

I buy Costco tomato paste in 170g cans. It's a little bit sloppier than the purée that comes in tubes, and it's not so concentrated, so is good for home made pizza. It's kind of a cross between passata and purée.

So this says 14.5oz which is a bit more than 400g I think.
Can’t really change the concentration of it without water so will try and make it sloppier

I’d do a carton of passata plus some tomato purée up to the weight on the recipe.

Verbena17 · 02/02/2024 17:32

Recipe says 2lbs of ground beef so….about 500g x 2 of beef so quite a lot, hence why I thought 2 purées might be right?

I think US tomato paste is UK tomato puree.
And if you are slow cooking, you probsbly don't want too much liquid adding
But if you are cooking in the oven, I'd add a load of water.
2 tubes of puree sounds a lot - but how much other stuff is going in? If you are making 8 bags for the freezer, it's probably not excessive. If it's a meal for 2, it sounds wrong!

Verbena17 · 02/02/2024 17:33

I’m making the whole amount but only have 2 portions today

I’m cooking on the stove top in big pot

Right I think I’ve found her recipe on YouTube but it definitely does not look like she uses 2 tubes worth of the paste!
Does it???

On the how to make it, she’s switched the quantities and now it says 2 x 6oz cans of paste! 😩 this is i prefer ready meals 😬. I’m rubbish at cooking!

im just gonna add a whole 1 x tube of purée and see how it goes.
Thanks everyone

1 tube per 500g beef sounds about right.

Here's a bbc good food recipe for slow cooker beef chilli

https://www.bbc.co.uk/food/recipes/slowcookerrchilliconn13029

It uses 500g of beef, with 300ml stock and 1 tin of tomatoes, then 2 tablespoons of tomato puree.

So for your recipe with 1kg of beef, it would be 4 tablespoons of tomato puree with 2 tins of tomatoes and 600ml of stock. If your tube of puree is about 4 tablespoons then it would be ok I think.

Verbena17 · 02/02/2024 18:22

Brill thanks - I’ll try that next time then.
