Help me Plan a vegan/veggie -ish meal

This is the brief:

We eat eggs, seafood and very very occasionally chicken.
Strictly no dairy and other meat though.

We have got friends round at the weekend with the above restrictions!! I don’t mind at all but would be happy for some ideas.

I will probably avoid chicken in case it’s not the type of thing they like.

Ideally I’d like to put 4/5 dishes on the table for a help yourself. I can easily do a ‘hot carb’ like rice/potatoes, and interesting salad. Just need some things to go alongside. I am a fairly good cook 😄

Does seafood include fish? Sometimes it doesn't. Prawns and garlic mayo,tapas style?

How is veggie and dairy free (which hits the brief) tricky?

I went vegan a few months go. Baked falafels are my staple. Just go to youtube for some recipes. Super easy to make.

Ottolenghi is a good idea. I did his aubergine,coconut milk curry once which was lovely.
@murasaki They’re our friends!! I could easily just feed them and us but it’s nice to make an effort.

Do a pilaf rice for your hot carb, falafels, hot flatbread (check dairy free), a green salad inc avo etc, maybe buy or make babaganoush, and if you can be bothered that ottolenghi chickpea dish linked above.

Teriyaki salmon with broccoli served on rice noodles.

I make this all the time as it’s so quick and easy but does impress people and everyone enjoys;

Make a teriyaki sauce (lots of recipes online) I use soy sauce, rice vinegar, maple syrup, garlic, ginger, citrus (I don’t have an exact recipe myself I make to taste)

Dry the salmon with kitchen paper then put the salmon and tenderstem on foil and cover in the sauce -add a glove of garlic to the parcel and fold up the foil - in the oven for 15/20 mins at 180.

Make the rice noodles a few minutes before the salmon is done, put everything on top and then garnish with chopped spring onion, chilli flakes and any crumbled nuts! Literally takes 25 mins from start to finish.

@BridgerGo i think this is a good plan.

I also have 2 ripe pomegranates in the fridge currently so I could do something with those.

could also just do a large tray of roasted veg. Sweet potatoes etc

This will all look really appealing on the table. Easy to add some other dips and chopped up veg (kids will be happy with that )

How about a roast with a nut roast?
My vegan friend who also happens to be dairy intolerant does a lot of roasts, she also makes fake sausage casseroles. One of these could be nice with roasted veg but not so good for picking it at.
