I use eating apples for all purposes. I find cookers (like bramley) go to mush.

Stopped buying cooking apples years ago, too expensive!

Eating apples I think are nicer

They will be fine but might have less flavour than cooking apples. If I use eating apples, I don’t add sugar to them as I prefer tart fruit.

In fact, I plan to make a Swedish Apple Cake today to use up some Braeburn apples that are languishing in the fridge. I’m more nervous about using gluten free flour than I am of using eating apples! I can’t decide whether to swap to gf flour or to use cornflour as some recipes suggest!

Not too squishy. They’re softer and much sweeter. And more delicious but then I don’t get the joy everyone seems to have over ‘tart’ fruit!

Gluten free flour works fine, but make sure you add xanthan gum to bind in the way gluten does.

I don't like Golden Delicious anyway, too plain and don't taste of much. I prefer to use Braeburn and green eating apples for a pie. If I only had Golden Delicious I'd use a little less sugar in the topping as they are quite sweet so you don't need the tart/sweet difference. Or pastry with very little sugar added.
