Evening meal inspiration pls

I need some ideas for evening meals, there is usually just me and my 4yo as my husband sorts himself out as he has some dietary requirements. My daughter - whilst doesn't eat a huge volume of food, isn't overly picky, she will eat most meats and most vegetables, the only no go is mashed potato! We are happy with veggie dishes too (the more of those the better)

Me and my husband lost a lot of weight between 2021 and 2022, but I went full time in a super stressful job late 2022 and I put some back on, and my diet ended up pretty poor as I was was so tired and had no time to do anything so was just grabbing anything and snacking too much.

I've now reduced my hours and ready to tackle my food rut but I need ideas! I love cooking, so that's not a problem. What are your fave, tasty, healthy family evening meals?

At this time of the year it tends to be:

Toad in the hole with lots of veg
cottage pie with lots of veg
spag bol
lasagna
mince and dumplings lots of veg
chicken and leek bake and veg
beef casserole and veg
pizza
curry
baked pots with different toppings
sausage pasta bake
sausage casserole and veg
giant Yorkshire pudding mince gravy veg

Everything made from scratch apart from curry (no idea where to start).

Pasta alla Norma (Aubergine pasta) - Straight forward and yummy. You’re supposed to deep fry the aubergine but I tend to either bake it and roast the garlic at the same time, or I just shallow fry in a tablespoon of oil.

Chicken, chorizo paella with peas, sweetcorn and carrot. Not traditional, but packs a lot of veg into a convenient delicious dish.

Vegetable pie - Butternut squash, potato, minted peas, broccoli, whatever you like. Mix with garlic, double cream. Put a puff pastry lid on top. Very yummy and versatile.

I am going to try first time Jamie Oliver's baked Chinese chicken rice this evening might be a bit of a faff first time but looks straightforward once done a couple of times

Me, my DH, DD and DS are from Texas, and my beautiful kids will always eat their Meemaws favourite Tamales, with Cowboy caviar on the side! Open your meals up to the south Xx

We are having chicken with bacon and onion in a bechamel sauce this evening, with broccoli, carrots and rice. It's chicken fricasee really, but DH doesn't like fricassee apparently (although he always says it's nice and clears his plate...) so we're not having fricassee, just chicken in a tasty sauce.
I will be making the mince for cottage pie tomorrow (to be frozen and then defrosted to eat on Sunday) so I expect there will be enough to have some of that tomorrow evening, probably with baked potatoes.
Thursday will probably be pork chops in barbecue sauce, with home made potato wedges and veg
Friday will probably be fish chips and peas
haven't decided on Saturdays meal yet - maybe a chicken curry?

All fairly ordinary food I'm afraid, nothing exciting but all delicious.
