I don't eat meat by dd does. I buy mainly breaded chicken but want to get away from this.

I have bought two chicken breasts do I wrap in foil to keep moist?

I have an oven and an air fryer.

Does the breast still have skin on? That would roast the best.

TheChosenTwo · 28/01/2024 09:51

I’ve got to be honest, with no fat on it a roasted chicken breast will be incredible dry even if it does have skin on!

12 minutes in the air fryer is what my DS does with a chicken breast.

I don't eat meat but cook skinless chicken breast for my son often. I wrap in foil and put a dot of butter on. Cooked in oven. Never dry unless I accidentally leave it in too long.

TwigTheWonderKid · 28/01/2024 09:54

I'd pan fry it in a little oil and butter.

WormHoleInSpace · 28/01/2024 09:58

With the skin on ?
Push some very finely chopped tomato ( the equivalent of 1 cherry tomato would be enough) under the skin, or a teaspoon of salsa.

No skin ? A a few thin slices of mushroom and rasher of bacon on top

Both loosely covered with foil for the the 1st half of the cooking time, then uncovered to finish

this, I do them in my multicooker on airfry for 15 minutes, they come out fine.

Pan fry with a little oil, won't take long. Season with salt and pepper, add some herbs if you have any. Knob of butter and crushed garlic clove for last minute would be nice.

Or make a pocket with a knife and stuff the breast with cream cheese, butter and garlic, goats cheese, mozzarella, whatever be creative ... wrap in a couple of slices of bacon and roast for 20 minutes

If @Sunshineandrainbow is like me, I will cook meat as a non meat eater but I don't like skin, excessive meaty smells in the house or faffing about cutting it when it's raw. That's why foil parcel is good. Keeps it all contained!

Seeline · 28/01/2024 10:12

Skin-on thighs or leg portions are best for roasting.
Breasts can go dry, but wrap in foil or bacon.

steppingout · 28/01/2024 10:16

I add some black pepper, mixed herbs and a slice of lemon. Cover with baking paper making sure its tucked in around the sides, rest for 10 mins before eating. They generally take 25-30 mins at 180. Works perfectly!

kingzion · 28/01/2024 10:18

Air fry for 12 mins small breast, 15 for big.

Wrap in foil to keep moisture add any seasonings.
I personally wouldn't roast a breast as it can go dry.

Thighs or drumsticks though are laaavely! X

Edited

I have used those years ago, thanks for the reminder.

Chicken is skinless. Think I made a mistake with that.

Skinless

I have bacon though so can use that.

Thanks everyone I know it's a bit basic and I am grateful for the replies.

Wrap it in foil and bung it in the oven! I’ve no idea about air fryers as I don’t have one but I think it should be ok in that to save putting the oven on.

longtompot · 28/01/2024 15:15

When I cook chicken breast I brush on some olive oil and season all over. I then pan fry in my cast iron pan on each side till golden and put it all in a 180 degree oven for about 15 mins, depending on how thick the breast is. Rest for a bit before serving.

GrumpyPanda · 28/01/2024 15:36

I would brown it in a akillet from both sides, then braise in a little bit of white wine, stock or a mixture. Roasting will turn it into shoe sole.

Goldbar · 28/01/2024 22:16

Stuff with blue cheese and finely chopped garlic, parsley and shallots. Wrap with bacon and secure with a toothpick. Wrap in foil. Roast at 180 for approximately 30 minutes and unwrap the foil for the last 5 minutes.
