Slow oven cook chicken

Hello, we gave people coming for lunch today and I am making roast chicken, but want to go out this morning.

Id it possible to oven cook a chicken on slow for longer? Could put it on anytime up to 1030 to eat at 1330/1400 ish

I don't think it will fit in the slow cooker bug otherwise this is also an option.

I regularly slow cook a whole chicken. Takes about 6 hours on low. Very succulent and almost falls apart. Yum.

I would cover the roasting tin in foil, or in a roasting pan with a lid if you have one, and put some liquid in with it (a glass of white wine, or that much water with lemon juice). I would probably put some cut up lemons, lots of whole garlic cloves, and some rosemary or thyme in as well. Pour some oil over the chicken and sprinkle with salt and pepper or chilli flakes. Cook it at about 150°C for about 3 hours. An extra 1/2 hour won’t matter, or you could take it out at 1:30 to rest, if you are home by then.

When you get home, your house will smell deliciously of roast chicken. If there’s no time for roast potatoes, serve with new potatoes. You can make a lovely lemony, garlicky gravy with the juices.
