Shallots - bought over a month ago but still seem fresh…

Do you think it’s ok to use these? Don’t want anyone getting a dodgy tummy, they seem totally fine and have been kept at room temp in a cupboard for that whole time

I still have onions I harvested last summer in my veg drawer. Of course they will be fine, if they haven't gone soft, mouldy or sprouted.

They will be absolutely fine.

If they seem fine, they are fine. Onions can be stored for months in the right conditions.

Shallots as in onions? Eat them unless soggy. They won’t go off in a month. If they are dry and in dark cupboard they will keep for ages- we would harvest them in autumn, and tie them up in old tights- they lasted all winter and spring.
