Help me resign from nice job with nice Boss!

18 months ago I gave up my career of 20 Years, I was in a very senior Position and decided to 'start again' by retraining in my dream sector. I was given a chance by a small company knowing I had no experience but a drive to learn. I've gained so many skills and understanding during my time with them, but have now secured a really fantastic senior position in a much larger scale company.
I went for the interview very aware I was inexperienced but we clicked and I've now been training for the role alongside my current job (both part time). In around a month I'll be ready to go 'solo' as such, in my new job therefore need to hand my notice in very soon to my current employer.
Problem is I feel so very bad about it, my Boss is really the most wonderful understanding, kind person and we work great together. She knows I want to move up in my role but we've spoken about realistically there not being a vacancy within her company for a long time yet. I'm 100% sure the new job is exactly what I want but I'm dreading having the conversation!

Just thank her for giving you the opportunity and say “ as you know I want to progress and have been given the opportunity to do so. If anything comes up at this current company, please let me know as I have really enjoyed working with you”

I think you could go with:

I'm very sad to offer you my written resignation, and would like to express my gratitude for being given the opportunity to work here. My time here has been invaluable and I have thoroughly benefited from working with you. You have been a superb manager and I am grateful for the chance I had to work with you. Recently, however, I have been offered the opportunity to take on a senior position with another company, and am excited at the possibilities, whilst being sorry that it will mean the end of my time here.

My last working day will be (give a month's notice).

Kind regards
