500 ml of sour cream

Well it will be now, a week out of date unopened and forgotten in the fridge. What can I use it for please? (Originally bought for an event cancelled due to illness).

If it were me, I think I would throw it away, rather than risk an upset tummy.

(Puts hard hat on, to await being told I'm wasteful and it wouldn't hurt me).

It will probably be fine, I've used sour cream quite a bit older than that.
So, stroganoff, cheesecake, borscht or similar. Anything that can be cooked, realistically.

Make a pot of chilli con carne and have tortilla chips and sour cream with it
Or chicken / any meat / veg fajitas and use as a topping
It will be fine and not poison anyone!

I wouldn't throw it away, it may have soured a bit more but will almost certainly be still edible.
i like the fajitas/nachos idea. And you could also mix it with chopped spring onion and garlic plus some mayo or cream cheese for a dip for crudités.

Unless it has mould on it, that is. Then you should probably chuck it.

Make goulash or borscht and top with sour cream.

Top blinis or toast fingers with sour cream & lumpfish or salmon caviar for aperos.

Stir in plenty of chopped watercress and have as a sauce with salmon.

Is it actual sour cream ( which is purposely soured by the addition of lactic acid or similar ) or ordinary cream which you think may have gone off ( different flavour, not the tang of soured cream but something earthier )

Unopened, stored in a fridge just a week past date may well be absolutely fine and not spoiled at all.

use it to make muffins - delicious! Lemon blueberry and poppyseed for preference. Raspberry and white chocolate chip also a good option.

If it's unopened then it will be fine - and probably fine for another week or two. If opened, then I must admit I'd still use it unless there is active mould for another two weeks but I have a healthy disregard for use by dates particularly for soured or fermented dairy products...

From the OP I think that it's cream that has gone sour, not sour cream. Personally I would bin it.

Fresh cream can last a surprisingly long time in the fridge, IME.
Can you bring yourself to taste it, OP?

I use it as a base for creamy sauces. Really good with lemon / dill / parsley with fish

If it’s ordinary double cream and hasn’t been opened it will most likely be fine. Taste it and you’ll know soon enough.

Soured cream - not sure, I don’t use it but I would have thought taste and smell and sight test would work too.

Unopened, it'll be fine unless you open it and there's mould. Those dates are all a scam anyway. What about a stroganoff?
