Bread bakers - quick help please

My bread hasn’t risen at all in second prove. Have made this recipe dozens of times and never had this problem. Pretty certain everything weighed correctly etc, first rise was good and it looked normal. So, do I stick it in the oven now and cross my fingers it will be edible, or give it another hour? It’s in tins and there has been next to no rise in last hour. Thanks!

Given the weather, is it as warm as usual where you've got it?

Is your kitchen colder than usual? (Mine is, it’s perishing here today). If so, just give it longer and move it somewhere a little warmer today.

Is your yeast ok? Not out of date, open too long or left out of the fridge once opened? Failing that I agree it's probably the temperature.

Knock it back again and reprove.

Thanks all …. kitchen shouldn’t be too much cooler as Aga on but maybe a couple of degrees. Yeast is okay - bbe Sept ‘24. Have moved it closer to cooker and will blame the weather if it’s a disaster!

The yeast must have been ok for the first rise to work, mustn't it?

CurlewKate · 18/01/2024 15:54

I'd give it another hour-put it somewhere a bit warmer.

That’s what I thought!

It’s filled out in the tin now but not risen upwards …. have caved and knocked the heating on!
