What's your fave veggie/vegan recipe (that doesn't include aubergine)

Looking for something really tasty, I like most things but don't eat a lot of beans/pulses. Happy to try though.

Thai green curry - a bag of stir fry veg, block of tofu diced up, coconut milk and thai green curry paste . 10min max cooking time and minimal prep!

@TheGreyRockess the pilaf looks great, that's kind of the thing I was hoping for, but happy to try other stuff too.

@timtam23 I'm good with lentils, it's not so much that I don't like beans/pulses, just that they aren't really part of my diet as yet.

If you are a garlic lover…

Roast a bulb of garlic (whole cloves), sweet red peppers and cherry tomatoes in olive oil and mixed herbs, until soft and charred.
Boil your preferred pasta and season, add vegan ‘butter’. Mix in the veggies and add lots of fresh basil. Top with vegan cheese if you like it. It’s so simple but delicious. You will stink for a week afterwards, though

Look for Tinned Tomatoes blog, loads of good ones there. They are vegan but you can add dairy if you wish to substitute non dairy ingredients.

If it's the confit chickpea curry thing with chilli, that's delicious!

Another vote for something similar to the French lentils upthread - I do the same.kind of thing but without the mushrooms and it's so delicious. I always add good olive oil to serve, and sometimes parmesan and chopped parsley.

I thought of pilaf too but someone has beaten me too it on that too - Nigel Slater has a simple one with cardamom and butter that we make a lot.

I also love a tabbouleh - served with just hummus and bread, or falafel if you need a bit more bulk. Oh and coronation chickpeas!

With pulses I find that green or brown lentils better than red ones. Mung beans are good too.
