What's your fave veggie/vegan recipe (that doesn't include aubergine)

Looking for something really tasty, I like most things but don't eat a lot of beans/pulses. Happy to try though.

I love this Falafel recipe falafel recipe but I serve it with roast aubergine slices, crispy fried onions, pomegranate, and chilli sauce along with houmous and the yoghurt sauce in the recipe, you don't have to 😋

A vegetarian biryani. Layers of rice with a tasty spicy lentil and vegetable curry in between and fried onions on top, then sealed tightly and baked. I don't have a recipe for it but it is delicious! There are loads of recipes out there, most ask for sliced tomatoes to be layered as well but I prefer not to.
I am a dedicated meat eater, but I barely miss it at all when eating this.

Any dal!

My favourite is coconut dal:

1 onion chopped, sauté
1 fresh chilli, 3 cloves garlic and a thumb sized piece of ginger, chopped, add to pan once onion is soft
Heaped dessert spoon curry powder, tsp turmeric add to pan.
100g red lentils
1 veggie stock cube
600ml water
25g creamed coconut (or use a can of coconut milk and reduce the water)
Add chopped coriander and/or curry leaves at the end.

I serve with lightly pickled veg (any can work or shop bought pickles) and chappatis or rice

To save money you can use dried chili flakes and frozen garlic and ginger

You're right - it contains shrimp.
You can still make it without the kimchi. I checked the gochujang sauce, which is one of the other ingredients, and it looks like it is veggie.
