What's your fave veggie/vegan recipe (that doesn't include aubergine)

Looking for something really tasty, I like most things but don't eat a lot of beans/pulses. Happy to try though.

I made cashew cream! Which was very easy! I just soaked some cashews for about an hour. Then I put them in my Ninja blender with some water and blended them for about 4-5 minutes. It worked really well. I think I did one cup of cashews and one cup of water.

I know you said you don't like pulses, but I find pulses especially chickpeas taste best from glass jars (bodum sofra etc) you tend to get more fur your money this way too. I get ours from ethnic shops ( I'm lucky to have several to choose from)

Chickpea smush is chickpeas, rinsed (you can take the skins off if you want but I don't) , mashed. Add gherkins and capers vegan (or regular) mayo salt and pepper to taste.
You can make it whatever texture you like , I like mine fairly chunky.
I eat this at least once a week
There's lots of variations on this some people add nori or lemon

Thanks. I might try that if I don't have any tahini in. I eat a lot of hummus.
I don't take the skin off any pulses. Definitely don't peel broad beans.

I roast the carrots rather than dry them as then I don’t have to stand over the hob. I use Merchant Gourmet’s glorious grains. We’re actually having this tonight. DH and DS are having salmon with it but I’m just having this. I do two sachets of the grains and I find it quite filling.

My base for a lot of meals is a ratatouille without aubergine (I fry onion, leeks, peppers, courgettes and mushrooms then add them to several tins of chopped toms and herbs.

It goes great on pasta with a cheese top (makes a good pasta bake), or in a baked potato. If you add a tin of chick peas and some curry spices it makes a lovely veggie curry. Or just eat it as a ratatouille with a baguette.
