I am looking for some dinner suggestions for NYD, it’s just myself and 3 daughters (husband is deployed this Christmas/NY) but would still love a special sit down 3 course meal.

Two DD’s are vegetarian, 3rd and myself like meat so ideally looking for something that I can either substitute the meat part for another protein or something that I can make two versions of the same (minus the meat in one)

We have had a chat this morning about ideas, and a few ideas floated about, lamb with Humous, roasted aubergine, mint, feta, pomegranate & quinoa warm salad, or a posh roast, beef/veg equivalent wellington, red wine sauce veg, potato’s etc but neither have been a hit with everyone.

Whats on everyone else’s menu this NYD?

We're having a dinner party on NYE which, knowing our lovely guests, will turn into a bit of a rager.

So on NYE morning, whilst I'm already cooking, I'm going to knock together a lasagne (I make a banging spicy mushroom version as I try to be veggie as much as possible). NYD plan: alka seltzer and Diet Coke for breakfast, dog walk for fresh air, nap, reheat laz and eat straight from pan. Wash down with whatever cremant is left from the night/morning before.

Lentil soup, steak pie with mash and veg, homemade tiramisu (for me cause I'm the only one that likes it)

Scottish so…steak pie. Only ever had it at new years.

i’m now veggie as is my daughter and she has requested cheese & onion pie this year so we’ll have that and the others steak pie. Roast potatos, veg & gravy as well as pigs & blankets & stuffing as my husband always wants those as well.

Thank you. I cheat a bit to make cooking easy. It is not me that makes the home made butter - my DD does. That is actually the hardest task and her butter is way better than mine.

The Hunza apricots are bought home by DS from a street market in Bristol. That is the easiest dish. It takes 5 minutes of my time before bed, then I leave it for 18 hours. It is delicious, more so with Glayva if you can get it.

I love the gardening during the year. It is just a hobby. But the best thing is the guests do all the washing up or dishwasher stacking as I prep through the morning! The biggest 'chore' I have is to unscrew the last cork off the corkscrew (which always seems to end up left there).
