Make ahead meal ideas for poorly, fussy eating, diabetic Dad.

Poor old dad is 72, mid chemo for bladder cancer and is also type2 diabetic. He is very much of the ‘won’t let it get the better of me’ mindset and is carrying on as usual, but the chemo is tough, and having spent some time with them over Christmas, he is looking a little thin and fragile (understandably).

He does most of the cooking at home, but I want to feel like I’m doing something useful and would like to make him some meals which they can whip out and reheat when they’re ready which are healthy and nutritious.

To add another complication, DF is completely veg phobic and very much a meat and carbs man, but is also type 2 diabetic which is obviously really important to keep under control, especially now. He’s a fussy bugger but needs to keep the weight on in a way which is healthy to him.
I guess I’m after some 2 year old style hidden veg recipes, but highly calorific and low carb which I can freeze in batches. Any ideas or recipe book recommendations much appreciated. Thanks.

If you did something like a beef stew or meatballs with tomatoes sauce/gravy , I have a mini chopper for veg. Use the chopper for onion, carrot, celery, mushrooms and cook it all down in the sauce

Could also check out My Fussy Eater blog/Insta. She makes hidden veg type meals, and her cookbook is also excellent.

Broccoli and cheese soup? Low carb. Thicken with red lentils. Add cream for extra calories
