Ham sandwiches for breakfast. Turkey and stuffing sandwiches for lunch.

Today will be another Christmas dinner with turkey and ham and different veg to yesterday.

Turkey and ham pie.

Ham egg and chips.

I always have to cook way too much veg on Christmas Day to make sure there will definitely be enough leftovers for bubble and squeak on Boxing Day!
Have it with cold turkey and ham and lots of salad.
Probably same again tomorrow when the carcass will be bare enough to make stock for turkey soup.
Final day usually make some sort of wine/cream sauce for the remains of turkey.

Not hosting this year, but what I usually do with the leftover turkey after stripping the carcass to boil up for stock, is put it in small meal-sized packets in the freezer, labelled ‘Turk bits’.

They later go in e.g. a stir fry or a substantial Mulligatawny soup.

For that, gently fry some chopped onion, carrot and celery for a few minutes, add curry powder, gently fry a bit more, then add plenty of chicken or turkey stock (cube is fine) simmer 15 mins. Then add about 4 tbsps rice, simmer until done, lastly add turkey bits and 1/2 to 1 chopped apple (don’t bother peeling) bring back to boil and simmer 5 minutes.

Delish and very warming on a cold day.

Main stuffing meat and roast veg plus gravy is in the pie dish (huge tray) ready for Christmas pie tomorrow after a long walk.
Bones in the freezer for Pho later

It does three meals for 10.

I did a trio of broccoli, cauliflower and romanesco that only 2 people tried (ahem).
I’m thinking of cutting it up small and stirring it through buttered noodles.
Any other ideas for broccoli refusers?

Grill some raclette cheese over it, or make a gratin with cheese sauce.

Some delicious sounding ideas, here. I got a beautiful turkey joint and stuffing balls from Waitrose. It was from the food to order range, so I can't get another one, but I've ordered more of their chipolatas wrapped in air dried bacon with sage leaves for Saturday. Going to do another dinner on NYE. I'm tempted to see if the shops have any more turkeys in as I love a leftover dinner, turkey curry and sandwiches with lots of lurpak and mustard. Pizza with leftovers topping is also a great idea.

Boxing Day Frittata - all leftovers in a big pan. Add sauted onions, herbs and beaten eggs. Bake till eggs are set. That's lunch for several days, serve with salad.

I always worry about this. Our turkey was left out in the kitchen for about 5 hours after serving it yesterday - is that safe re food poisoning?!

Cold meat, bubble & squeak, leftover stuffing and pigs in blankets, gravy, beans, pickles. My favourite meal of the year.

Any meat and veg I always cook into a pie. Turkey, gammon, stuffing, vegetables all go into a white sauce and I make the pie with shop bought shortcrust pastry. If I have lots of leftovers I just make two pies and freeze one for another time.

All of the leftover cheese gets made into the best macaroni cheese of the year.

Today we're going to try Christmas pie. We have garlic herbed roast potatoes, parmesan parsnips, roast carrots, marrowfat peas, brussels sprouts roasted with butter, garlic, breadcrumbs & cheese. Turkey & gravy & sage & onion stuffing
All in a dish & topped with puff pastry. Hope it'll be delicious!

I'm having turkey, stuffing & cranberry sandwich on fresh white bread, coffee & sherry trifle for brunch in bed now
.made by dh & my favourite sandwich of the year!!!

That is too long in my opinion but I am cautious with food hygiene after a horrible bout of food poisoning years ago. Two hours sat out at room temperature is the max I'd leave cooked meat.

It goes on and on until it’s finished with turkey curry / sandwiches.

We don’t have turkey as we don’t like it so we had beef. A beautiful 4 rib forerib of beef 😋
we had a beef hash type thing this morning with some leftover beef all cubed up, with some cabbage and crispy fried potatoes etc, fried egg and toast. Sort of bubble and squeak I suppose. Tonight we will use the leftover ham as whatever anyone wants. We sent lots of guests home yesterday with leftovers though as we go on holiday tomorrow so we try to avoid having too much leftover as we know we won’t be here to enjoy it but also we don’t want to scrimp on anything so inevitably there are always a large amount of leftovers!

I made this roast vegetable and harissa filo pie today for Boxing Day lunch using up all the leftover roast potatoes/parsnips/carrots/sprouts and it was fantastic. I think it's nice to do something with flavours a bit different from the traditional Christmas lunch with the leftovers
