Recipe Reboot for 2024

Please can you help me get out of a cooking rut and suggest some recipes that work with your family? I feel like they always reject my cooking or I'm making separate dishes for different people/beige food for kids.

I don't mind subbing out one item for a fussy person but more than that gets too complicated!

Person 1: Hates potatoes (except oven fries), cucumber, hates rice other than white basmati, doesn't really like unprocessed meat. Loves pesto, frankfurters, smoked salmon and Thai curry.

Person 2: Hates sloppy food, hates celery and cooked carrots. Loves steak.

Person 3: Doesn't eat pork. Prefers rice or pasta to potatoes. Trying to follow weight watchers.

Person 4: At her wits end. Also trying to follow weight watchers.

We all like Spaghetti Bolognese, chilli and curry. Veg person 1 and 2 will eat include sweet corn, peas, tomatoes and green beans.

Please help with suggestions! 😀

Salmon with sundried tomatoes blitzed with garlic on top (oil drained off) wrapped in foil and baked in the oven. On a bed of white rice mixed with peas and sweetcorn. Not cheap though.

Do you all like mildly spicy food? Maybe Cajun chicken 1 pot might be acceptable? Might be too saucy for person 2… You could use a slotted spoon to shake off excess sauce.

Yes @AnotherSaturdayNight the Cajun chicken thing would be a great idea. Person 2 could cope with that, he's just not a fan of stews. Salmon would be unpopular with person 1 unfortunately. I forgot he doesn't like fish (grrr!) But person 3 and 4 might have that on days when 1&2 are elsewhere.

Cajun chicken 1 pot
onion
cajun seasoning to taste
2 large chicken breasts
chorizo approx half ring (drain off fat)
2 garlic cloves
mixed peppers chopped
200g dried pasta
400g chopped tomatoes
480ml chicken stock
splash cream (low fat elmlea - sorry to any hardcore cream fans but needs must)
handful chopped spinach
cherry tomatoes quartered
cornflour to thicken or reduce amount of chicken stock
grated cheese on top before serving

I think I add 300ml chicken stock then add more boiling water if needed. Not helpful I know. I go by what it looks like. Then add a bit of cornflour if I think it needs it.
