Ok...1st time doing this..!

I have made Paxo as instructions..
Added sausage meat...

Got the cranberry sauce jar ready.

Do I need to bind it all with an egg ...either before or after the cranberry sauce ??

I wouldn’t use egg. or Paxo what's the cranberry sauce for?

NonSequentialRhubarb · 19/12/2023 20:53

I've never used an egg. Just mix the paxo and the sausage meat then cook.

Cranberry sausage stuffing !

Mam bought one years ago ...thought I would try and do my own !!

No the pack will work like breadcrumbs so no need for an egg.

But, cranberry sauce?? Surely not

JamieKnows · 19/12/2023 20:55

Ah, you need dried cranberries not sauce 😂

bizzey · 19/12/2023 20:55

Thank you !

I saw other recipes were talking about binding with egg.

I had a mild panic moment !

No egg needed.
Cranberry sauce might make it sloppy. Should be dried cranberries I think

RosesAndHellebores · 19/12/2023 20:56

I'd use the highest quality sausage meat I could lay my hands on 1lb. I'd add a cup of finely chopped onion, gently sweated. A tablespoon of chopped sage, perhaps a little thyme, a squeeze of orange, black pepper, some finely chopped smoked bacon fried off, a cup and a half of white breadcrumbs. I usually cook it in a buttered oval pie dish.

JamieKnows · 19/12/2023 20:56

You don't need pack either tbh.

Just get sausagemeat, a small onion diced, one crust breadcrumbed, a small pack of cranberries, your preferred herbs. Mix it all up and roll into balls

Ostryga · 19/12/2023 20:56

No just mix the sausagemeat with the stuffing that’s had the boiling water in it. Then I would put it in an oven dish and spread the cranberry sauce over the top almost like a glaze.

I think I might do this for my stuffing actually

Using it as a glaze is a good idea

bizzey · 19/12/2023 20:58

Ohhh ...I like the glaze idea !

I cook my sausage meat, onions and celery, then add to the stuffing mix. If you wanted cranberries, I would add fresh or frozen whole cranberries at this stage. Bake in casserole dish with lid on.

GETTINGLIKEMYMOTHER · 19/12/2023 22:22

I use egg but that’s for sage, onion and sausagemeat stuffing made from scratch.

Dogsandchocolaterule · 19/12/2023 23:03

I always add an egg.

Paxo, water, egg, sausage meat and breadcrumbs on top.
