Long story short. Have moved abroad to the Dominican. Husbands best friend and family have been here for 20 years. I am doing xmas eve at our house and my goddaughter (14 yr old) wants to do a mexican buffet . She is just learning to bake and cook from me as her mum hates all things kitchen lol. For background. I am a certified chef. The chef in me wants to do a beef wellington and fixings..but she wants mexican. So. Does this sound ok for 4 adults and two young teens. I also would like some leftovers as we have two night guards here and would like to make them a plate.
OK.. so condiments and such ..
shred lettuce, dice tomatoes, scallions, shred cheese, Salsa, sour cream, dice avocodo, Homemade avocado cream, Homemade cilantro lime cream. Big bowl of nacho chips and homemade tortilla wraps.
Meats. Pulled mexi chicken and plain chicken (for our picky one lol) Pork carnita, Chili lime shrimp
Sides. Mexican cold street corn salad and hot mexi rice
Dessert
Churros with carmel and chocolate sauces for dipping
Cherry cheesecake (for my husband as he has always had it on xmas eve lol)
what am I missing?
Yes I have catered for years thru my restaurant but it is a bit different this year and since I owned a steakhouse, never had the need to do a mexican theme .
