Settlers of Catan is good and has extension packs to liven it up.
The same people made a trading game, but I can't remember the name.

Patchwork 2 only
Thurn und Taxis 2-4 (plays well with 2,3 or 4)
Azul again 2-4 but works well with any

We play Settlers as a 2 player, but with some variant rules we found online.
