Parsnip soup

I have never tried parsnip soup, but am intrigued by this recipe.

I make spicy parsnip soup - fry an onion, add 4 diced parsnips, add turmeric (I think 1/2 tsp) and 1 tsp cumin seeds, once fragrant add 1 diced potato then 1L of veg stock.
Cook for about 20 min until veg is soft, pour into blender and whizz.
You can add creme fraiche or cream for a thicker soup. Season to taste.
Freezes well too.

I had a similar as a curried parsnip soup, croutons from the toasted slice of bread and sprinkling of cheese/herbs directly onto the soup if needed (tho obv there is cheese in it already).

I sometimes make apple & parsnip soup if the fruit bowl is looking a bit unhappy! But usually it's bacon, carrots, swede, or lentils. It just depends what I need to use up. A straightforward curried parsnip soup is really nice without anything else added to it tbh.

Parsnip soup is lovely! I would follow the recipe exactly on first go. If I really wanted to add anything else in I would stick with other seasonal root veg.

Parsnips are too sweet for me, the only thing that redeems them is a huge amount of cheese and curry spices.

I add apple, carrots, sweet potato, ginger, cumin, curry powder - not all at once - to parsnip soup. I use coconut milk instead of cream too as I don't really like creamy foods.

Some vegetables lend themselves to soup. Parsnip is one, celeriac another.

I made parsnip paste soup last year for Christmas with some homegrown parsnips and it was beaut.
