Low fat buffet ideas. Nothing complicated!

Just as it says in the title really. A few members of my family need lower fat options so thinking are there obvious and easy ideas for buffet food? Going to do wholemeal pasta salad, low fat mozzarella tomato salad, and falafel with hummus. What else could I do? I'm not a great cook and won't have tons of time. Any ideas would be greatly appreciated!

Egg muffins/crustless quiche.

Crudites and low fat dips

@ManchesterRoad Good idea. Found a recipe on Sally's baking addiction for veggie crustless quiche which seems a good option.

Chicken skewers
Prawn skewers
Wholegrain couscous with chargrilled vegetables - you can buy the veg ready prepped from the freezer aisle, all the supermarkets do them. Cover the couscous with boiling water - add a stock or stock pot if you like - fluff it up after a few minutes and mix with the cooked veg. Add lemon juice/white wine vinegar/cider vinegar and some olive oil. You could use bulghur wheat instead of couscous for more texture.

Isn’t a crust less quiche an omelette?!

More a frittata, but yes a variation.

Wholemeal pasta is AWFUL!!!!! I suggest just using low fat ingredients in place of full fat ones for normal buffet food, and proving things with more veg/fruit. I make coleslaw and potato salad using a low fat dip, for instance. Grapes are easy to pick up and eat and are usually popular with most people. Instead of a dish with cheese in use veg or low fat ham. (E.g. Quiche, but use a low fat pastry and no cream). Cold lean meats with chutneys, salad etc. A lot depends on whether it is a finger buffet or a sit down one, and whether you want not or cold food.

Any nice sliced cold meats would be good.

Marinated chicken (tandoori or tikka works well cold if the buffet is all cold but so does cajun). If it's going to be a hot buffet then marinated chicken with peppers and onions on skewers would be great (maybe with some small wraps?)

Crackers and cottage cheese.

Frittata or a take on Spanish omelette.

Fruit salad or fruit "kebab" skewers.

If it's a hot buffet then small cups of veggie soup or a lentil soup might be nice.

Falafel and hummus if shop bought can be surprisingly high fat. If you make your own falafel and bake rather than fry they will be much lower in fat.
Home made, baked pita chips and salsa would be very low fat.
Most seafood is low fat.
I agree with the chicken skewer suggestions.

I love a big beautiful salad. Red peppers, yellow peppers, avocado, sliced egg, tomatoes, cucumber, sliced mushrooms, lettuce, lemon, salt, pepper, low fat dressing. You can add so much to this.

MooQuackNeigh · 10/12/2023 17:16

Nice bread, warm from the oven. Butter as an option. Lots of salads. Coleslaw, green salad, green pesto pasta, cucumber salad, meat platter with low fat options like turkey/chicken. Cheese platter with low fat options like cottage cheese. Sliced carrot and cucumber sticks. Cherry tomatoes, lean chunk of gammon to slice, boiled eggs, garlic tomato flatbread with a cheesy option for non dieters

Thanks for all the ideas - so helpful! Feeling much more prepared.
