Kids are 2 and 7
Best season to go?
How many days?
Which hotel?
Is their enough big rides to try and get another family to come so we get to ride them?

I would say mid spring is best. Not too hot and less rainy. I would say at least 2 days in the park and maybe a couple of days in Paris itself.
I'm not sure about hotels as it's been years since I've been.
I'm not sure what you mean by the last bit.

Sante Fe - great hotel. Purchase a dining plan. We had breakfast in the hotel (buffet style) then ate at a different hotel in the evening.

went via Eurostar, bought that separately to hotel package.

We went for 3 nights. I’ve been before to there and Florida, went to DLP last September. Was cold cold and rainy.

lots for your family to do, will keep you all entertained, you can take them on pretty much everything, there are height guides for everything.

There is a DLP on Facebook with lots of tips . Did enjoy it but a few rides were out of action and a lot of restaurants were closed, maybe due to the effects of the pandemic.

The Hotel Cheyenne is great, and I quite liked the Santa Fe (more reasonably priced). I’d definitely recommend either Eurostar or driving to avoid restrictions on baggage, but I buy quite a lot of things when I’m there.
