Cake mix and what cakes can you make no fruit with brown sugar

So… yes it’s probably disgusting but I had a sudden craving for raw cake mix, butter, brown sugar (soft light brown, flour and milk). Yummy. I had other treats in the house but just fancied this…

So I got to thinking (I’ve run out of caster sugar) what cakes (not rich fruit ones) can I make with brown sugar? Do blondies fall into this category? DM used to make small queen cakes with currants and dark brown sugar when we were little. The actual taste of the cake mix with the brown sugar was so much nicer than with caster sugar!

I generally use whatever sugar I have. Might affect the taste a bit. Caster sugar/soft brown/dark brown all have similar size crystals so that I think is what matters for cake making so it dissolves, but I could have just assumed this! If my mother didn’t have caster/soft brown etc for cakes she just used a blender on granulated sugar to make it into caster sugar. But you have to just do it a little or you end up with icing sugar.
